Steak with Gherkin and Green Olive Salsa
Steak
Make it worth your while, eat less, pay a little more, make sure the quality is spankin’. Find a great butcher, develop a great relationship. Small businesses survive through community.
Greens
I used asparagus but you could easily do spinach or broccoli or kale or any green that is in season.
Cauliflower
I had some leftover so sliced it up ready to pan fry.
Gherkins
Read the label and make sure it is naturally done. There are plenty out there that are made without all the additives, buy a couple of jars, they last for like two generations.
Olives
Same goes, read the jar and when you find an excellent product that is made using the old school method and not all the added nasties, grab a couple for the pantry.
Heat your frypan on a medium high heat. Once it starts lightly smoking add your meat. If your buying good product with the delicious fat attached don’t bother with oil. It isn’t necessary. Cook your steak to your liking and once done remove from the pan and allow to rest before eating.
While your steak is cooking prepare your greens and cauliflower. These are fried in your steak pan while the steak is resting.
For the salsa you can make extra and keep in the fridge. Make sure the green olives are pitted and then finely chop and mix with field chopped gherkin. This is your delicious salsa. It doesn’t need any seasoning as the pickling effect on the olives and the gherkin is heaps a flavour!
Eat, enjoy, soak up the nutrition and with the time you saved on cooking dinner go look at the sky for a bit. It’s summer, it’s getting prettier by the day.
